The Director of Retail Dining Operations is part of Hopkins Dining and is responsible for enhancing the student experience by providing quality retail dining services to students, faculty, staff and visitors. This position reports to the Assistant Vice Provost for Dining and shares the commitment to create an environment that enhances the dining experience of Hopkins students and supports the academic mission of the University. It is the university's goal to be one of the top dining programs in the country.


Hopkins Dining manages a self-operated program with both retail and residential operations in seven locations on the Homewood and Peabody campuses. JHU will be expanding the footprint of dining with the addition of the Hopkins Student Center, SNF Agora Institute, and an expansion of the recreation center. Hopkins Dining also manages relationships with third-party food service contractors in addition to both beverage and snack vending contracts. This role has direct responsibility for $6 million in current revenue.


The Director of Retail Dining Operations provides expertise, management, and oversight of all campus retail dining operational functions. Responsibilities include oversight of retail locations, service contracts, facility management, and marketing of the retail locations. The Director of Retail Dining Operations oversees a large current staff comprised of up to 75 people. Direct reports include the Levering Manager and the Charles Street Market Manager. This position works directly with multiple food service contractors on the development and execution of a strategy for success.


Specific Duties & Responsibilities

General Administration

  • Assist in the general administration of department, including the establishment and implementation of policies and procedures, personnel administration, and crisis management.
  • Provide support to AVP for strategic planning, meal plans, and food services throughout the retail dining program.
  • Oversee the day-to-day retail for the department.
  • Manage third party food vendor contracts as well as the campus beverage and snack vendor accounts.
  • Assist the AVP with retail marketing efforts and work with the marketing manager to ensure the messages are appropriate for the Campus Community.
  • Oversee the financial performance of all retail operating units in dining services.
  • Assist the AVP with the department's capital plan, including the focus areas of maintenance needs and renovation cycles.
  • Project management planning and development of location and brand planning Finance Ensures cost controls are in place and being adhered to. Achieves assigned budget goals. Oversees execution of required daily reporting. Oversees completion of required department reports. Working closely with the AVP, develops budget to deliver financial and service goals.
  • Implement planning and development of location and brand planning.

  • Ensures cost controls are in place and being adhered to.

Controls

  • Ensures that all security, safety and sanitation standards are achieved.
  • Employs good safety and sanitation practices.
  • Oversees control of all retail inventories, product cost, cash handling and purchasing.


Leadership & Internal Relationship Building

  • Uses engagement strategies to recognize, motivate and celebrate individuals and teams delivering outstanding performance throughout location.
  • Promotes a cooperative work climate, maximizing productivity and morale.
  • Interviews, hires, trains and develops team members according to Dining Standards.
  • Displays a positive attitude towards team members.
  • Mentors' department managers to develop their skills and leadership abilities.


Facilities, Safety & Maintenance

  • Oversee all repair and maintenance programs for retail operations including preventive maintenance.
  • Oversee the retail departments safety and security initiatives.
  • Liaison with multiple JHU internal partners including but not limited to Facilities & Real Estate, JHU Security, the Whiting School of Engineering, the Krieger School of Arts & Sciences, and the Peabody Institute.


Information Technology

  • Drive outcomes with Point-of-Sale technology including registers and mobile ordering platform.
  • Maintain a means for electronic communication with students such as software package Mosio or Private Review.
  • Research and provide technology that supports the student experience for the retail operations.


Contract Administration

  • Manage the day-to-day relationship with third party dining contractor(s) assuring all operations, food preparation, customer service, food variety and quality are done at the highest level.
  • Ensure and measure compliance with food standards, sanitation, operational hours, financial terms and any other measurable objective for all contractors; intervention may be necessary at times to protect the University.
  • Develop a program of inspection, reporting, correction and re-evaluation of the dining contractors.
  • Enforce adherence to federal, state and local laws and regulations in regard to the delivery of a food service program.
  • Develop action plans and goals for correction of any contractor's non-compliance with food service agreements.
  • Disseminate feedback and assessment data to contractors for improvement and goal development as needed for improvement.
  • Coordinate meetings as necessary with contractors to maintain excellence and develop partnership goals for joint success of the institution and each contractor.
  • Facilitate any contractor transition to ensure uninterrupted service to the University.
  • Collaboratively work on a marketing program for the third-party dining vendors within the dining program.


Retail Store Management

  • Supervise assigned departmental exempt and non-exempt staff; create, implement, and administer staff training programs, including the development and maintenance of training manuals and policy and procedure handbooks.
  • Review retail prices and make recommendations for increases.
  • Create and manage mitigation strategies for lost/stolen goods.


Department Responsibilities & Administration

  • Supervise the members of the Dining Operations staff. Assure each staff member performs to a high standard and give regular feedback to each employee.
  • Represent Dining Services throughout campus and to visitors.
  • Analyze historical and current data to plan for the future growth of the dining program.
  • Ensure alignment of sustainability and nutritional initiatives for retail operations.


Special Knowledge, Skills & Abilities

  • Demonstrated use of Microsoft Office Suite; experience in dining related software such as Blackboard Transact and Sequoia Quadpoint.
  • Self-directed, able to establish timelines and complete assigned tasks with minimal supervision.
  • Excellent written and oral communications skills, including the ability to articulate issues clearly to a diverse audience.
  • Demonstrated commitment and ability to practice open and effective communications with students; University faculty, staff and administration; contractor partners and external groups to build and maintain collaborative relationships.
  • Demonstrated ability to manage a complex workload, prioritize tasks, and use good judgment in providing services based on goals.
  • Project management or start up experience a plus.

Additional Information

This position is considered essential personnel and will be asked to be on-call via phone as needed during the semester as a point of contact for contract partners and internal parties and may need to report to campus to manage emergency situations.  This position will also need to execute flex hours (including weekends) to accommodate maintenance and service work or other office events during non-business hours, typically quarterly.



Minimum Qualifications
  • Bachelors Degree and at least 5 years of relevant experience food service and/or training or an equivalent combination of education and experience required.
  • An understanding of managing dining staff in a union environment.
  • Managing the service and repair of food service facilities and equipment.
  • ServSafe certification is required and must be obtained within three months of employment if not currently held.
  • A valid driver's license is required.
